– 1.5 lbs beef stew meat (chuck, cut into chunks) – 3 carrots, peeled and chopped – 3 potatoes, peeled and cubed – 1 onion, chopped – 3 cups beef broth – 2 tablespoons tomato paste – 1 teaspoon dried thyme – 1 tablespoon flour (optional, for thickening) – Salt and pepper to taste
Cook Time: 20 Min
Ingredients
Heat oil in a large pot over medium-high heat. Brown the beef on all sides.
Add chopped onions and cook until soft.
Stir in tomato paste and cook for 1 minute.
Add carrots and potatoes, then pour in the beef broth.
Stir in thyme, salt, and pepper.
Cover and simmer on low heat for 1.5 to 2 hours, until beef is tender.
Optional: Mix flour with a bit of water and stir in to thicken the stew before serving.
