Prep Time: 20 Min
– 1 lb chicken breast, sliced – 1 ripe mango, diced – 1 red bell pepper, sliced – 2 tablespoons soy sauce – 1 tablespoon honey – 1 teaspoon grated ginger – 1 clove garlic, minced
Cook Time: 20 Min
Ingredients
Heat oil in a skillet and sauté chicken until cooked.
1. Remove chicken and sauté garlic, ginger, and bell pepper. 2.
Return chicken to the skillet.
Add diced mango, pour in soy sauce, and drizzle with honey. Stir well to combine all the ingredients evenly.
1. Stir everything well to combine the flavors and cook over medium heat for 5 minutes, allowing the sauce to begin thickening and the ingredients to meld together. 2.
Simmer for 3–5 minutes, stirring occasionally, until the sauce thickens slightly and coats the back of a spoon. This allows the flavors to meld and develop a glossy finish.
Serve hot over a bed of steamed white rice or cooked noodles, such as udon or soba, to soak up the savory mango sauce. Garnish with freshly chopped cilantro or green onions for added freshness and color.
